Mexican Dinner Bowls
Cauliflower is one of the trendiest vegetables to be swapped out for potatoes, rice etc. with the intent to sneak in a veggie and lower the starchy carbs. It made my Top 5 Healthy Swaps in yesterday’s post after all!
I’ve tried out cauliflower mash and cauliflower hash browns in the past but have not been impressed….yuck! I do, however love cauliflower rice! In my opinion, it’s the closest substitute for rice that might actually, kinda pass for rice and it does taste good. It’s also considerably quicker to make than actual rice which is a nice bonus All you have to do is grate the raw cauliflower head with a grater or toss it in a blender/food processor then steam it for 10 mins in 1/3 cup of water. Done!
I use this cauliflower rice in one of my favourite weeknight meals – Mexican Dinner Bowls.
The basis of the meal is the cauliflower rice and ground taco meat then you just add whatever toppings you choose. My favourites are onion, avocado, spinach, salsa and hot sauce (pictured below).
