Sauteed Shrimp on Brown Rice Pasta

Today’s recipe is less of a recipe and more of a meal idea.  When I am looking for a quick and healthy weeknight meal, shrimp is one of my top options.  In addition to being packed with protein and nutrients like selenium and B-12, it’s super quick to cook.  Like the salmon in a previous post, I buy it frozen so it’s saute shrimpavailable when I need it (and because good fresh seafood is hard to come by in the Prairies!!).  When I’m ready to get cooking, I just throw the little guys in a strainer and run cold water over them to thaw.

For today’s meal, I cooked up the pasta as per the package directions.  I use brown rice pasta because my tummy likes it better but you can use whatever floats your boat.  If you are grain free, Spaghetti Squash would be a great idea.  While that was cooking, I sauteed the shrimp in a little coconut oil and garlic until they were pink.  Once it was all done, I tossed it all together with a little spaghetti sauce and served with a Caesar Salad.  Easy, healthy and yummy just the way I like it.  I hop you like it too!
