Happy Halloween!  Is this anyone else tonight?  Haha, don’t worry here are a couple of quick and healthy breakfast ideas to start tomorrow morning back on the right foot!

Both recipes are for one serving so modify if you are feeding more.

Savory Oatmeal – (via Healthy Nibbles and Bits)

Yields 1 Serving, 10 mins total time

Ingredients

1/4 cup dry oats
3/4 cup water
Salt and Pepper
2 tbs shredded cheddar cheese (optional)
1 tsp coconut oil divided
1/4 cup diced green peppers
2 tbs finely chopped onions
1 large egg

Directions

Cook the oats as directed on the package.  When the oatmeal is done, stir in shredded cheese and a pinch each of salt and pepper.  Heat a nonstick pan with 1/2 teaspoon of coconut oil over med-high heat.  Add vegetables and cook for 2-3 mins until they soften.  Spoon veggies over the oats and reduce heat to medium.  Add remaining 1/2 tsp of coconut oil and fry the egg.  Cook until the whites are no longer translucent and serve over oatmeal.  Enjoy!

My Favourite Smoothie

This is my go to smoothie.  I make it for breakfast or lunch if I’m eating on the run.  Here’s a little hack: if you are planning on having your smoothie for lunch, make it the night before and freeze it.  If you allow it to melt over the morning, it will be the perfect consistency by lunch!

Ingredients

1 cup unsweetened vanilla almond milk (or fluid of choice)
1 cup frozen berry blend (strawberries, blueberries, blackberries, raspberries)
1 scoop protein powder
Fill the rest of the blender with spinach

Directions

Blend until smooth.  Enjoy!

 

Don’t worry about the meal of Halloween candy you just polished off, the real key is not letting it spiral into a week of candy meals.  Get right back to your healthy lifestyle as soon as possible.  Happy Halloween!
