You can count on lots of fibre and flavours in this Sheet Pan BBQ Chicken Bowl recipe! It’s also packed with calcium thanks to the broccoli & sweet potato. Your bones will be happy about that!
Try it out for an easy weeknight dinner or add it to your meal prep Sunday plan and have a few yummy lunches all ready for you.
BBQ Chicken Bowls

Serves 4
Ingredients
- 2 medium sweet potatoes, peeled and chopped into 1/2″ chunks
- 1 onion, chopped
- 2 tbsp olive oil, divided
- Salt as desired
- 1/2 tsp garlic powder, divided
- 1/2 tsp chipotle powder (or chili powder or paprika)
- 1 head broccoli
- 4 boneless skinless chicken breasts
- 1/2 cup BBQ sauce, divided
Directions
- Preheat oven to 400F
- Place chopped sweet potato and onion to a sheet pan and toss with 1 tbsp olive oil, salt, 1/4 tsp garlic powder and chipotle powder and toss until combined
- Bake for 20 minutes
- Toss the sweet potatoes and move to one side of the pan. Add the broccoli and toss with remaining olive oil and salt.
- Place chicken breasts in the middle of the sheet pan and brush with half of the bbq sauce.
- Bake and additional 15-20 mins until the chicken is done.
- Remove the pan from the oven and shred the chicken breasts using two forks. Toss the chicken with remaining bbq sauce.
- Add the chicken, sweet potato and broccoli to bowls and serve immediately.
- Enjoy!
