You know I like quick, easy & healthy but it has to be delicious as well. This easy Mongolian Turkey & Rice recipe checks all of those boxes for sure! The sauce is spicy & sweet and it’s packed with veggies and protein. Gather all of the ingredients and less than 30 minutes later you have a flavourful, weeknight meal that will please the entire family.
Easy Mongolian Turkey & Rice
Prep time – 5 mins Cook time – 20 mins Total time – 25 mins
Serves 6
Ingredients
- 1lb extra lean ground turkey
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 1 small onion, diced
- 4 cloves of garlic, minced
For the Sauce
- 1/4 cup low sodium soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tsp sugar or sweetener of choice
- 1 tbsp minced garlic
- 1 tbsp red pepper flakes (optional)
Garnish
- Sliced green onions
- 1 tbsp sesame seeds
- Rice, quinoa or cauliflower rice
Directions
- Cook the rice, quinoa or cauliflower rice as per directions
- While the rice is cooking spray a large pan with cooking spray
- Add the ground turkey and cook over medium high heat, breaking apart as it browns
- Add the onion, bell peppers and garlic and cook until pepper softens, stirring often to prevent burning
- In a small bowl, add the sauce ingredients and whisk lightly
- Add the sauce to the turkey mixture and toss to combine
- Serve over rice etc. and garnish with green onion and sesame seeds
- Enjoy!
