The combination of basil, tomato and balsamic is one of my favourites! It’s why I started growing fresh basil at home – so I would always have basil on hand for such cravings. This Caprese Chicken recipe is so delicious and easy to make and satisfies that craving while packing a protein punch!
This recipe was made in the Instant Pot but scroll to the end for the oven roasted version.
Note: If you haven’t noticed already…I am not a food blogger and therefore food photography is not my strong suit. Don’t be fooled by this less than stellar picture, this meal was delicious!

Caprese Chicken
Total time 30 mins
Serves 4
Ingredients
- 1 tbsp olive oil
- 1/2 onion, sliced
- 4 garlic cloves, minced
- 1/2 cup chicken broth (not needed for oven roasted)
- 4 bonless, skinless chicken breasts
- 3 1/2 cups cherry tomatoes
- 3 tbsp balsamic vinegar
- 1 tbsp chili flakes
- 2 tsp salt
- 1/2 tsp black pepper
- 3/4 cup mini mozarella balls
- 2 tbsp fresh basil, finely sliced
Directions (Instant Pot)
- Place olive oil and onion into the inner pot of the instant pot and saute on normal until slightly browned – 7 mins
- Add garlic and saute an additional minute
- Add chicken broth and deglaze with a wooden spoon
- Layer chicken breast evenly then top with cherry tomatoes
- Drizzle with balsamic vinegar then sprinkle with chili flakes, salt and pepper
- Close and lock the lid and turn the steam release handle to sealing
- Pressure cook on high for 12 minutes
- Release pressure using quick venting
- Sprinkle mozzarella balls and fresh basil on top of chicken & tomatoes then cover until the cheese is melted about 3-4 minutes
- Serve over quinoa (shown), rice or cauliflower rice.
Oven Roasted Caprese Chicken
- Preheat the oven to 400 degrees.
- Place chicken breasts & cherry tomatoes evenly onto a baking sheet
- drizzle with olive oil and sprinkle with salt and pepper
- Bake 20-25 min until the tomatoes are soft
- Remove from the oven and place mozzarella balls on top of the chicken
- Bake for a further 5-7 mins – until cheese melts and chicken is cooked
- Sprinkle the chicken and tomatoes with balsamic vinegar and fresh basil and serve.
