Mmmmm creamy pasta, who doesn’t love it?! Well I certainly do! This creamy chicken pasta recipe is not only quick and delicious but it’s a healthier version of the standard creamy pasta dishes. It was a hit in my family and took only 25 mins from start to finish. Switch out the standard pasta for whole wheat or gluten free if you like for an even healthier punch. Try it out for yourself – if you are a pasta lover, you won’t be disappointed.
Healthy Creamy Chicken Pasta
Serves 6 – Prep Time 10mins – Total Time 25 mins
Ingredients
- 1lb boneless, skinless chicken breast cut into cubes
- 1 small onion diced
- 1/2 cup mild salsa
- 1 chopped green bell pepper
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp paprika
- 1/2 cup shredded monterey jack cheese
- 1/2 cup shredded cheddar cheese
- 1 cup fat-free half & half
- 8oz angel hair pasta (regular, whole grain, gluten free)
Directions
- Cook pasta according to the package directions
- Spray a large skillet with cooking spray and add chicken and onion
- Cook on medium heat for about 5 mins or until the chicken is brown and the onion is translucent
- Stir in salsa, green pepper and seasonings and heat for 5 more minutes, stirring frequently
- Add cheese and half & half to the pan and continue cooking until cheese is melted, stirring frequently
- Stir in pasta and mix well to evenly coat
- Heat for an additional few minutes on low until heated through.
- Serve and enjoy!
